If they choose that option, the Game Bar opens and offers them to install the XBox app and allows them to record gameplay. We do not want our users to get this option and as much as I'm trying, there doesn't seem to be any group policy that exists to manage the game bar.

I saw that option, but it looked like something with a broad meaning, not specific to the game bar. I will definitely give it a try! Microsoft no longer makes operating systems with their customers in mind. Windows 10 is just another ad platform and Microsoft has proven once and for all they could not possibly care less what their business customers actually want.
They've shoe-horned so much anti-business consumer garbage into Windows 10, it's time to look at abandoning the Windows platform entirely. I know, I know-- easier said than done. Few GPOs to control things, Apps coming back with feature upgrades,no way to remove new apps and settings with feature upgrades, and all the junk they just expect to be in your enterprise environment.
